Chicken & Black Bean Taquitos in the air fryer by Jaymee SireI was recently gifted an air fryer, and let me tell you… it is a GAME CHANGER.

No longer do I have to purchase entire bottles of oil just for one recipe, and consume how many calories in the process. Not when I have something that can do the same job with a fraction of the oil and no mess.

Let me preface this post by saying that I was paid to do an Instagram campaign for the Ninja Foodi Grill. But as you guys know, I never promote anything I don’t use or love myself. I also had no obligation to turn it into a blog post, but I just loved how these turned out, and received a lot of feedback on my post, so I decided to make sure the recipe is easily accessible here on the blog!

I made these with shredded chicken and refried black beans, but the great thing about this recipe is you can really customize it based on your preferences or what you have in the fridge. I think a little cheese would be delicious as well!

I started with some grilled chicken that I actually cooked using the grill function on my machine. However, you could easily do slow cooker chicken or even leftover rotisserie chicken!

To get the tortillas pliable enough to roll, I recommend putting some on a plate, covering with a damp paper towel and microwave 30-90 seconds. Then, stuff with your favorite fillings and roll!

I do recommend refried beans as one of the ingredients, as they help hold the taquitos together (sort of like “glue.”) I skipped the cheese because I was making for a friend who can’t have dairy, but you could definitely add in some shredded Mexican cheese or some crumbled cotija!

Brush with oil (I recommend something with a high smoke point, such as Safflower) and place seam-side down in the air crisping basket. Cook on high (at 390 degrees) for about 6-7 minutes, or until tortillas are lightly browned and crispy.

Serve with sour cream, guacamole, pico de gallo, crumbled cotija cheese and cilantro!

These would be great for game day or just an easy weeknight meal to use up leftover chicken.

Crispy taquitos made in the air fryer are perfect for the Big Game.

Ingredients

  • 24 corn tortillas
  • 1 pound cooked, shredded chicken (leftovers work great here!)
  • 1-2 (16 ounce) cans refried black beans
  • Safflower oil, for brushing
  • assorted toppings, such as: guacamole, sour cream, pico de gallo, cilantro, crumbled cotija cheese and pico de gallo

Place tortillas, 8 at a time, on a microwave-safe plate. Sprinkle a little water between each tortilla and cover with a damp paper towel. Microwave until soft and pliable, between 30-90 seconds depending on the type of tortillas.

Spoon refried beans on a tortilla, and some chicken on one end. Roll, and using refried beans as the "glue," place seam-side down on a pan. Brush tortillas with safflower oil.

Pre-heat air fryer to 390 degrees. Place rolled tacos in a single layer in the air fryer basket, seam side down. Cook 6-8 minutes, or until tortillas are lightly browned and crispy. Continue until all taquitos have been cooked.

Serve with assorted toppings.

Notes

This recipe could also be made in the oven. Pre-heat oven to 400 degrees and cook taquitos seam-side down on a sheet pan until lightly browned and crispy (about 15-20 minutes.)
